Aunt Pats 'Eggless" Egg Salad
12 oz Tofu Mashed ( pat dry and refrigerate for hr),
1/4 tsp turmeric
1 stalk of fine celery chopped
1/4 minced onion
1/4 vegan mayo ( or light)
1 tbsp minced parsley
1 tbsp nutritional yeast
1/2 tbsp dill
1 tsp salt
1 tbsp mustard
Mix together and enjoy over crusty bread
